Notes: This method can be used to preserve chilies for several months. This fermented sweet chili paste can be used as a condiment to smear on textured surface of Edible Paper Experiments as well as crackers, breads and other foods. The recipe makes one jar of spread but can be multiplied to reduce the final product cost.
Chop stalks off of chilies, slice them lengthwise and also chop garlic into slices.
Place chopped ingredients into medium size jar. 3. Dissolve salt into water pur into jar until it just covers ingredients. 4. Place bag of water over the contents of jar so that they are weighed down and all content is below the surface of the water to encourage (anaerobic) fermentation. 5. Leave for 3-4 days until bubbles form near the ingredients inside of the jar. 6. Blend into a paste and pour oil over the surface.
