Notes: One melon rind will make 4 jars of watermelon rind pickles. This method can be used to preserve a melon for several months.
In a saucepan or cooking pot, mix sugar, vinegar, ginger, and pepper. Bring to a boil. Add rinds; return to a boil. Reduce heat; simmer, uncovered, 10 minutes or until tender.
Carefully ladle hot mixture into four hot large jars, leaving a bit of headspace. Remove any air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until tight.
Place jars into large pot with simmering water, ensuring that they are completely submerged. Bring to a boil; process for 10 minutes. Remove jars and cool.
