Notes: 3 waste tomatoes will produce one small jar of tomato salt or several spice containers. This method can be used to preserve tomatoes indefinitely.
Cut tomatoes into 6-8 wedges.
Arrange on drying racks and dehydrate in an over at 200f/90c for 2 - 4 hours or until the tomatoes become quite dry and the leave in a warm dry place to continue dehydrating for 1-2 days. Alternatively you can dry them in full sun for 1-2 summer afternoons.
Blend together with salt and other herbs/spices.
Pour mixture into small jars or spice bottles.
